Guar or green beans or cluster beans recipe
This is a traditional Sindhi dish. In the summer, you'll definitely love a plate of guar gum, chapati, and a glass of lassi before taking a well-deserved nap. Guar gum is a bitter green bean that is very popular among Sindhis.
For 4 people we will need the following ingredients:
-500 g of guar gum, cut and chopped into 1 cm pieces, which we will boil for 10 minutes
-2 tablespoons of oil
-2 cloves of garlic, finely chopped
-5 g of ginger, peeled and finely chopped
-2 green chilies finely chopped
-1 finely chopped tomato
We will also need the following spices:
-1 teaspoon of coriander powder
-½ teaspoon of chili powder
-½ teaspoon of turmeric
-½ teaspoon of mango powder
-Salt to taste
-25 g of fresh, finely chopped cilantro leaves
Elaboration:
1. Heat the oil in a skillet over medium heat until hot. Add the garlic and sauté until lightly browned.
2. Add the ginger and chilies and stir everything together for a couple of minutes.
3. Add the tomato, chili powder, turmeric, mango powder, and salt. Stir everything until the tomato begins to form a paste.
4. Add the boiled guaar and cook until all the water has evaporated. Stir regularly.
5. Serve with warm chapati .
