Bombay Style Vada Pav😋
To make the Bombay sandwich, we'll use a hamburger bun, spread a layer of green sauce on it, and place the potato wedges inside.
To make 12 vadas we will need the following ingredients:
For the potato filling:
-1 kg of peeled and chopped potatoes
-2 teaspoons of mustard seeds
-1 teaspoon of fennel seeds
-1 tablespoon of oil
-Salt to taste
-1 teaspoon of turmeric powder
-1 teaspoon of mango powder
-15 curry leaves
-1 teaspoon of garam masala
-2 green chilies
-5 g of ginger
-25 g of fresh, finely chopped cilantro leaves
For the dough:
-160 g of chickpea flour
-½ teaspoon of turmeric powder
-Salt to taste
-1/4 teaspoon of baking powder
-160 ml of water
-Frying oil
Elaboration:
Boil the potatoes, let them cool, and chop them finely. Add oil to the pan. When it's hot, add the mustard seeds, fennel seeds, and curry leaves. Fry them until crispy.
Add the green chilies and ginger. Once combined, stir everything together for a few minutes until the ginger is lightly browned. Add the turmeric powder and garam masala and stir until everything is combined. Add the potatoes and mix until they are coated with the spices.
Add the salt and mango powder. Let it cook for 5 minutes over medium heat.
Finally, add a little cilantro and let it cool.
Once cooled, form into balls and dip them in the batter. Mix everything well and add the yeast when ready to fry. Let the oil heat up completely, then lower the heat to medium when you start adding the balls. Fry until the balls are golden brown.
Green sauce
Ingredients:
-100g of cilantro leaves and stems
-25g of mint leaves
-1 clove of garlic
-50g of onion
-½ teaspoon of cumin seeds
-The juice of half a lemon
-1 tablespoon of roasted chickpeas (optional)
-Salt to taste
Elaboration:
Place all the ingredients in a food processor and blend until a smooth paste forms.
