DESCRIPTION - Moth beans, also known as matki beans, mat beans, Turkish gram, or dew beans, are small brown beans, similar to moong beans. Similar in flavor to mung beans, but with a nuttier taste, these small beans are simmered with other vegetables for a staple curry in northern India.
Tip: Soak beans in water for 12 hours, then rinse and drain. Cover with fresh water, bring to a boil, and simmer for 30-40 minutes or until tender.
PREPARATION AND USE –

• Matki sprouts can be cooked with spices, onions, garlic, ginger, and tomatoes and can be served with roti, rice, naan, etc.
