Traditional Mode of Use -
1. Prepare the base (starter) :

Mix 4–5 teaspoons of Eastern Appam Podi with ¼ cup of water.

Boil until you get a thick paste.
2. Grind the additional ingredients :

Grind ½ coconut with a pinch of cumin and 1–2 small onions into a fine paste.
3. Mix and ferment :
-
In a large bowl, mix ½ kg of Eastern Appam Podi with the cooked pasta and coconut mixture.

Add 5–6 glasses of water and a pinch of yeast.

Stir well and let ferment for 10–12 hours, covered.
4. Cook the appams :

Add salt to taste.

Pour a ladleful of batter into an appam pan, swirl the pan to distribute, and cook until the edges are crispy and the center is cooked.
✅ The fermented dough can be stored in the refrigerator for up to 3 days.
