Tamarind noodles, or semia, are another variation of semia where the tangy flavor of tamarind predominates. They are prepared by tempering mustard, curry leaves, and chilies in a little oil and adding tamarind water. Once the water boils, the semia is added until well cooked. The tamarind water, along with the herbs needed for the recipe, is included in a masala packet. Vermicelli, or semia, is an Indian variation of spaghetti made from durum wheat. Short spaghetti is used to prepare sweet dishes such as kheer or payasam. Vermicelli can be used to prepare breakfast in the form of upma, along with vegetables such as peas, beans, and carrots.
