DESCRIPTION – 'Methi' is the Indian name for fenugreek, and 'Kasoori Methi' in English translates as 'dried fenugreek leaves.' These are obtained from the fenugreek plant, which is derived from the legume family. The fruit is used for its seeds, which are extracted and dried to add a spicy flavor, and the leaves are used as an herb in cooking, such as when we use basil, sage, or thyme leaves.
These dried, fragrant leaves are light green in color and have a nutty, savory, and slightly bitter flavor. Their aroma is pungent and strong on the nose, yet when added to dishes, their flavor disperses and blends seamlessly and smoothly.

PREPARATION AND USE –
• Use it as a flavor and aroma enhancer in dishes as you would other dried herbs: basil, thyme, etc.
• Gently grind in a mortar and pestle to make a powder
• Add it at the beginning of dishes to allow its flavor to flourish and integrate throughout, or sprinkle it on top for a final aromatic garnish.
• Garnish on flatbread before baking for a great accompaniment to a curry
• Use it to perfume your rice.
• It's best to combine it with legumes like chickpeas, kidney beans, and lentils, adding a pinch at a time and tasting and smelling as you go before adding more.
• Pairs well with pumpkin, carrots, potatoes, and sweet potatoes
• It pairs best with meats such as chicken, lamb and beef, as well as seafood and fish.
