The flavor of sumac can be compared to that of freshly squeezed lemon juice; it's tart and sharp, but also contains a hint of sweetness, along with lingering floral notes. "It's a subtle flavor with some fruitiness that you wouldn't get from lemon juice."
Some describe it as a "dry acid," but it also works a bit like salt in that it brings out the natural flavors of a given food. That's why it's great for dry rubs, and I highly recommend it with chicken or fish like my grilled red snapper!

Use -
- Arabs use it to add flavor and acidity, and in general, it's a great way to add lemon flavor to dishes or dressings. And because of its acidity, it pairs wonderfully with meats like lamb, helping to cut through the richness and balance it.
- Salad dressings require nothing more than a pinch of sumac, extra virgin olive oil, and fresh lemon juice. And as far as marinades and seasonings go, my grilled chicken thighs, whole roasted snapper, kofta kebabs, and grilled cod wouldn't have the bright, earthy flavor they do without the vibrant spice.
- A truly amazing way to use it is in desserts! Yes, you can add a sprinkle to your ice cream or even to your cookie or brownie batter.
