Mixed Vegetable Soup
A healthy and tasty soup recipe made with mixed vegetable broth and spices to taste. The recipe is an extension of the popular clear vegetable soup and has a similar texture, flavor, and taste. It's an ideal starter or appetizer that can also be served as a complete meal for lunch or dinner.
- Preparation time: 5 minutes
- Cooking time: 10 minutes
- Servings – 3
Ingredients -
- 3 teaspoons of oil
- 3 cloves of garlic (finely chopped)
- 1 inch ginger (finely chopped)
- 2 tablespoons of spring onion (chopped)
- 1 carrot (finely chopped)
- 5 beans (finely chopped)
- ½ bell pepper (finely chopped)
- 2 tablespoons of cabbage (finely chopped)
- 2 tablespoons of green peas
- 2 tablespoons of sweet corn
- 4 cups of water
- ¾ teaspoon of salt
- 1 tablespoon of vinegar
- ½ teaspoon mixed herbs
- ½ teaspoon chili flakes
- ½ teaspoon of ground pepper
- 2 tablespoons of spring onion (chopped)
for mud:
- 1 teaspoon of corn flour
- ¼ cup of water
Instructions -
- First, in a large skillet heat 3 teaspoons of oil and sauté 3 cloves of garlic, 1 inch of ginger, and 2 tablespoons of spring onion.
- Add 1 carrot, 5 beans, ½ bell pepper and sauté for 1 minute.
- also add 2 tablespoons of cabbage, 2 tablespoons of peas, 2 tablespoons of sweetcorn and sauté lightly.
- Now add 4 cups of water and ¾ teaspoon of salt. Mix well.
- cover and boil for 5 minutes or until vegetables are cooked through.
- Also, in a small bowl, take 1 teaspoon of corn flour and ¼ cup of water.
- mix well making sure there are no lumps.
- Pour in the corn flour porridge and boil for 3-4 minutes or until the soup thickens.
- Add 1 tablespoon of vinegar, ½ teaspoon of mixed herbs, ½ teaspoon of chili flakes, and ½ teaspoon of pepper powder.
- mix well making sure the spices are well combined.
- Finally, top with 2 tablespoons of spring onion and enjoy the vegetable soup.

- ½ tsp pepper powder

for slurry:
- 1 tsp corn flour
- ¼ cup water

- further in a small bowl take 1 tsp corn flour and ¼ cup water.

- add 1 tbsp vinegar, ½ tsp mixed herbs, ½ tsp chilli flakes and ½ tsp pepper powder.

- finally, top with 2 tbsp spring onion and enjoy vegetable soup.
