Rice cooked with lightly spiced lentils -

Perhaps one of the healthiest and most comforting food recipes made with a combination of rice and moong dal. Throughout India, khichdi recipes are made for different reasons and occasions, but the basic ingredients and combination remain the same. It typically has all the spices and flavors and is served as is, without any accompaniments, but it tastes great when served with a dollop of pickle or creamy yogurt.

Ingredients -
for pressure cooking:

  • ½ cup of rice
  • ½ cup moong dal
  • 1 teaspoon of butter
  • ¼ teaspoon of turmeric
  • ½ teaspoon of salt
  • 3¼ cups of water

Other ingredients:

  • 2 tablespoons of butter
  • 1 teaspoon of cumin seeds
  • 1 bay leaf
  • pinch of asafoetida (hing)
  • 1 onion (finely chopped)
  • 1 teaspoon of garlic and ginger paste
  • 1 tomato (finely chopped)
  • ¼ teaspoon of turmeric
  • ½ teaspoon chili powder
  • ½ teaspoon garam masala
  • ½ teaspoon of salt
  • 1 cup of water
  • 2 tablespoons cilantro (finely chopped)

Instructions -

  • First, in a large bowl, rinse and soak ½ cup rice, ½ cup moong dal for 10 minutes.
  • In a hot pot, heat 1 teaspoon of ghee and add soaked dal and rice.
  • Stir-fry for 2 minutes, or until the dal becomes aromatic.
  • Now add ¼ teaspoon of turmeric, ½ teaspoon of salt, and 3¼ cups of water. Mix well.
  • cover and pressure cook for 5 minutes.
  • In a large pan, heat 2 tablespoons of ghee. Add 1 teaspoon of cumin, 1 bay leaf, and a pinch of asafoetida (hing).
  • sauté over low heat until the spices become aromatic.
  • Now add 1 onion, 1 teaspoon of ginger garlic paste and saute well.
  • Also, add 1 tomato and saute until the tomato becomes soft and mushy.
  • Keeping the heat low, add ¼ teaspoon of turmeric, ½ teaspoon of chili powder, ½ teaspoon of garam masala, and ½ teaspoon of salt.
  • Stir-fry for 2 minutes or until spices become aromatic.
  • Now add cooked rice and dal.
  • Also, add 1 cup of water and mix well, adjusting the consistency as needed.
  • cover and simmer for 5 minutes or until the flavors are well absorbed.
  • Finally, add 2 tablespoons of cilantro and enjoy the dal khichdi with pickles and curd.

• 1 tsp ginger garlic paste
• 1 tomato (finely chopped)
• ¼ tsp turmeric
• ½ tsp chili powder
• ½ tsp garam masala
• ½ tsp salt
• 1 cup water
• 2 tbsp coriander (finely chopped)

Instructions -
• Firstly, in a large bowl rinse and soak ½ cup rice, ½ cup moong dal for 10 minutes.
• in a cooker heat 1 tsp ghee and add soaked dal and rice.
• Saute for 2 minutes, or until the dal turns aromatic.
• now add ¼ tsp turmeric, ½ tsp salt and 3¼ cup water. mix well.
• cover and pressure cook for 5 minutes.
• in a large pan heat 2 tbsp ghee. add 1 tsp cumin, 1 bay leaf and pinch asafoetida (hing).
• Saute on low flame until the spices turn aromatic.
• now add 1 onion, 1 tsp ginger garlic paste and saute well.
• further, add 1 tomato and saute until the tomato turns soft and mushy.
• keeping the flame on low add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt.
• Saute for 2 minutes or until the spices turn aromatic.
• now add cooked rice and dal.
• Also, add 1 cup water and mix well adjusting consistency as required.
• cover and simmer for 5 minutes or until the flavors are absorbed well.
• finally, add 2 tbsp coriander and enjoy dal khichdi with pickle and curd.
