Ingredients:
• 300g fresh bhindi (cut lengthwise)
• 1 onion (sliced)
• 2 tomatoes (chopped)
• 1 teaspoon cumin seeds , 1 teaspoon coriander powder , ½ teaspoon turmeric , ½ teaspoon chili powder
• Salt to taste, 2 tablespoons of oil
Instructions:
1. Wash and dry the bhindi completely .
2. Heat the oil, add the cumin seeds, then the onion. Sauté until golden.
3. Add the tomatoes and spices. Cook the masala .
4. Add the bhindi, stir gently and cook uncovered until tender.

2. Crispy Fried Bhindi – An Irresistible Treat
Crispy, spicy and totally addictive!
Ingredients:
• 200g bhindi (thinly sliced)
• 2 tablespoons of besan (chickpea flour ), 1 tablespoon of rice flour
• ½ teaspoon turmeric, ½ teaspoon chili powder, 1 teaspoon chaat masala , salt
• Oil for frying
Instructions:
1. Mix the bhindi with the spices and flours until well coated.
2. Fry in plenty of hot oil until golden.
3. Sprinkle more chaat masala and serve hot.
3. Bhindi Do Pyaza – Double the Onion, Double the Flavor
A richer, restaurant-style dish, ideal for weekend dinners.
Ingredients:
• 250g of bhindi (chopped)
• 2 onions (1 chopped and 1 sliced), 1 tomato (chopped)
• 1 teaspoon ginger and garlic paste , 1 teaspoon garam masala , ½ teaspoon amchur , ½ teaspoon cumin seeds
• Chili powder, salt, oil
Instructions:
1. Sauté the bhindi separately in oil. Set aside.
2. In another pan, cook the onions with the cumin seeds.
3. Add the ginger and garlic paste , tomatoes, and spices. Stir-fry until thickened.
4. Add the bhindi , mix gently and cook for 5 more minutes.
