
Savory Steamed Gram Flour Cake | Khaman Dhokla

Dhokla is a popular savory snack from the Indian state of Gujarat. It's a popular and traditional snack recipe made with fermented besan or gram flour batter. The recipe is a sweet and sour flavor combination, usually served as a snack but can also be served as a breakfast recipe in the morning.
- Preparation time: 10 minutes

Ingredients -
for dough:
- 1½ cups besan flour/gram
- 3 tablespoons rava / semolina / suji, fine
- ½ teaspoon ginger paste
- 2 chilies, finely chopped
- ¼ teaspoon of turmeric
- 1 teaspoon of sugar
- hing pinch / asafoetida
- ½ teaspoon of salt
- 1 tablespoon lemon juice
- 1 tablespoon of oil
- 1 cup of water
- ½ teaspoon of eno fruit salt
for tempering:
- 3 teaspoons of oil
- ½ teaspoon of mustard
- ½ teaspoon cumin/jeera
- 1 teaspoon of sesame seeds/up to
- hing pinch / asafoetida
- few curry leaves
- 2 chilies, chopped
- ¼ cup of water
- 1 teaspoon of sugar
- ¼ teaspoon of salt
- 1 teaspoon lemon juice
to garnish:
- 2 tablespoons of grated coconut
- 2 tablespoons cilantro, finely chopped
INSTRUCTIONS -
- First, in a large bowl, strain 1½ cups of besan and 3 tablespoons of rava.
- Add ½ teaspoon of ginger paste, 2 chilies, ¼ teaspoon of turmeric, 1 teaspoon of sugar, a pinch of ginger, ½ teaspoon of salt, 1 tablespoon of lemon juice and 1 tablespoon of oil.
- Prepare a soft dough by adding 1 cup of water or as needed.
- Also, add 1/2 teaspoon of eno fruit salt. Alternatively, you can use a pinch of baking soda.
- Immediately steam the dhokla dough for 20 minutes.
- Also, cut the dhokla and pour the tempering.
- Garnish the dhokla with 2 tablespoons of chopped coriander leaves and 2 tablespoons of grated fresh coconut.
- Finally, serve instant khaman dhokla with green chutney and tamarind chutney.

- 1 tsp sugar
- ¼ tsp salt
- 1 tsp lemon juice
for garnishing:
- 2 tbsp coconut, grated
- 2 tbsp coriander, finely chopped
INSTRUCTIONS -
- Firstly, in a large mixing bowl sieve 1½ cup besan and 3 tbsp rava.
- Add ½ tsp ginger paste, 2 chilli, ¼ tsp turmeric, 1 tsp sugar, pinch hing, ½ tsp salt, 1 tbsp lemon juice and 1 tbsp oil.
- Prepare a smooth batter by adding 1 cup of water or as required.
- Additionally, add ½ tsp of eno fruit salt. you can alternatively use a pinch of baking soda.
- Immediately steam the dhokla batter for 20 minutes.
- Further, cut the dhokla and pour tempering.
- Garnish the dhokla with 2 tbsp chopped coriander leaves and 2 tbsp fresh grated coconut.
- Finally, serve instant khaman dhokla with green chutney and tamarind chutney.
