Kodo millet (Paspalum scrobiculatum) is an ancient, drought-resistant grain native to India and parts of Asia and Africa. Its seeds are small, ellipsoidal, light brown to dark gray, and covered with a tough hull.
Uses in recipes:
Its mild nutty flavor and versatility make it ideal for a wide range of dishes:
- As a rice substitute: Use cooked kodo millet as a direct substitute for rice in everyday meals, accompanied by curry, sambar or dal.
- Pulao/Biryani: It can be used to prepare tasty pulaos or even vegetarian biryanis with vegetables and various spices.
- Porridge/Upma: Cook it as a savory porridge for breakfast or a light lunch, adding vegetables, herbs, and spices. Sweet porridge (payasam/kheer) can also be prepared with milk, jaggery, and nuts. Idli/Dosa: Kodo millet flour or soaked grains can be ground with urad dal and fenugreek seeds to make fermented batters for idli and dosa.
- Salads: Cooked and cooled kodo millet makes an excellent base for refreshing salads with chopped vegetables, lemon juice, and herbs.
