Description -
Drumstick or Moringa tree pods are long, smooth-skinned, dark green, and three-sided. The pods, which can reach 6 to 18 inches in length, are soft when ripe and have bumps along the pod, revealing the seed nodes. Inside the pods is a fleshy pulp and pea-sized seeds encased in wing-shaped husks. The drumsticks are sharp at each end. Moringa pods are bitter with a somewhat sweet taste; their muted flavor allows for a variety of seasoning options.
Preparation and use -
Drumstick is praised as a tree of life, as nearly every part of the tree is beneficial and used for various purposes. Edible parts of the tree include leaves, stems, stalks, unripe green fruits or seed pods, fragrant flowers, and young seeds. The roots are turned into nutritious and delicious dishes.
The ripe seeds produce an edible oil called ben oil, which is odorless, clear, with a high concentration of behenic acid, and resistant to rancidity. The seed cake after oil extraction is used as fertilizer or as floc to purify water. The crushed root, with its distinct flavor, is used as a condiment.
