Description and use –
Clove powder is the ground form of cloves, which are the flower buds of a tropical evergreen tree in the myrtle family. It is dark brown in color and has a fine powdery texture. Clove powder has a strong, sweet aroma and is considered a spice.

Cooking with Cloves -
Whole or ground cloves are used to flavor sauces, soups, and rice dishes, particularly several traditional Indian dishes, and are one of the components of garam masala. Whole cloves are removed before serving or left out of the dish. Even when cooked, whole cloves have a very hard, woody texture that would be unpleasant to bite into.

Cloves are also found in a variety of desserts, especially ground cloves, and particularly during the holidays. Think eggnog or pumpkin pie spice. Cloves are often paired with cinnamon or nutmeg, but in general, it's a good idea to use them sparingly.
