Upma is a classic Indian breakfast recipe made with rava or sooji with a variety of spices and herbs. It's perhaps one of the easiest, simplest, and most underrated breakfast recipes that takes minutes to prepare and can be served to all ages. The traditional way is to prepare it with sooji and fresh herbs, but it can be enhanced by adding spice blends and select vegetables to make it more flavorful.
- Preparation time: 3 minutes.
- Cooking time: 10 minutes.

Ingredients -
- 2 tablespoons of oil
- ¾ teaspoon mustard
- 1 teaspoon of cumin
- 1 teaspoon of urad dal
- 1 teaspoon of chana dal
- 1 dried red chili / 1 chopped green chili
- few curry leaves
- ½ onion, finely chopped
- 1 inch ginger, finely chopped
- 2 chilies, finely chopped
- ½ teaspoon of salt
- 3 cups of water
- 1 teaspoon of sugar
- 1 cup coarse rava/semolina
- 1 teaspoon of ghee
- juice of ½ lemon
- 2 tablespoons cilantro, finely chopped
INSTRUCTIONS -
HOW TO MAKE THE CLASSIC UPMA RECIPE:
- First, in a large kadai, heat 2 tablespoons of oil. Add 3/4 teaspoon of mustard, 1 teaspoon of cumin, 1 teaspoon of urad dal, 1 teaspoon of chana dal, 1 dried red chili or 1 chopped green chili, and a few curry leaves.
- Add ½ onion, 1 inch of ginger, 2 chilies, and ½ teaspoon of salt.
- Sauté until the onions soften slightly.
- Also, add 3 cups of water and 1 teaspoon of sugar. Bring the water to a boil.
- Now keep stirring with one hand and add 1 cup of rava slowly.
- Be sure to keep stirring to prevent lumps from forming.
- Cover and simmer for 2 minutes or until the rava absorbs all the water.
- Add 1 teaspoon of ghee, ½ lemon juice, and 2 tablespoons of cilantro. Mix well.
- Finally, enjoy Upma with coconut chutney.
