One of the most popular Indian desserts, 'Gajar ka Halwa,' is known to have originated in Punjab. It's a delicious treat during the winter months. Make this delicious dessert for special occasions.

Serves: 1 box

Ingredients -

  • 1 kg of red carrots
  • ¼ cup ghee / clarified butter
  • 10 cashews / kaju (chopped)
  • 10 almonds / badam (chopped)
  • 3 cups of milk
  • ¾ cup sugar
  • ½ cup khoya/mawa (nothing more than milk thickened by heating in an open iron pan. It has less moisture than typical fresh cheeses like ricotta)
  • ¼ teaspoon of cardamom powder


INSTRUCTIONS -

  • First, peel the skin off the carrot and grate it finely. Set aside.
  • In a large pan, heat ¼ cup of ghee and fry 10 cashews, 10 almonds.
  • Fry until golden brown. Set aside.
  • In the same ghee add the grated carrot and sauté well.
  • Sauté for 10-15 minutes or until slightly colored.
  • Now pour 3 cups of milk and stir well.
  • Boil for 10 minutes, stirring occasionally.
  • Continue boiling until the carrots are cooked through and the milk is reduced.
  • Once the milk has completely thickened, add ¾ cup of sugar.
  • Mix well and cook until the sugar dissolves and thickens.
  • Cook until the halwa thickens and the ghee releases from the sides.
  • Now turn off the flame and add ½ cup khoya, ¼ teaspoon cardamom powder and fried nuts.
  • Mix well, making sure everything is well combined.
  • Finally, enjoy the gajar ka halwa or carrot halwa cold or warm.

  • mix well and cook until the sugar dissolves and thickens.
  • cook until the halwa thickens and ghee releases from sides.

  • Mix well making sure everything is well combined.
  • Finally, enjoy gajar ka halwa or carrot halwa chilled or warm.
