In spring, when the days get longer, we have more time to snack on tasty and exotic things, to experiment, and to prepare dishes that remind us of times gone by. I'm referring to the street food you can buy in India: stimulating, spicy dishes that awaken nostalgia.
Although Mumbai's street recipes are unbeatable, I think my mother has perfected this dish over the years. The word chaat means "to taste," so the trick is not to overthink what you're eating and make sure you find the flavors you like best.
By the way: Papdi are crispy wafers made of fried dough.
Ingredients (for 4 people):
- 1 packet of papdi (250 gr. more or less)
- 1 boiled potato, peeled, chopped and seasoned
- 7 or 8 tablespoons of natural yogurt
- a pinch of chaat masala
- 1 tablespoon of sev
- 1 tablespoon green cilantro and mint chutney
- a pinch of chopped fresh cilantro
- Black salt and cumin
Preparation:
- For the yogurt sauce: first mix the yogurt with the black salt and cumin.
- Place the papdis first and then the cooked potatoes.
- Spread the yogurt sauce over the potatoes.
- Sprinkle the green chutney over the yogurt, sev, chaat masala, and finally, the fresh cilantro.
Enjoy a walk through the streets of Mumbai!
