Arroz cocinado con lentejas ligeramente especiadas - 

Quizás una de las recetas de alimentos saludables y reconfortantes hecha con una combinación de arroz y moong dal. En toda la India, las recetas de khichdi se hacen por diferentes motivos y ocasiones, pero los ingredientes básicos y la combinación siguen siendo los mismos. por lo general, tiene todas las especias y sabores y se sirve tal cual, sin acompañamientos, pero sabe muy bien cuando se sirve con un toque de pepinillo o yogur cremoso.

Ingredientes -
para cocinar a presión:

  • ½ taza de arroz
  • ½ taza de moong dal
  • 1 cucharadita de manteca
  • ¼ de cucharadita de cúrcuma
  • ½ cucharadita de sal
  • 3¼ taza de agua

otros ingredientes:

  • 2 cucharadas de manteca
  • 1 cucharadita de semillas de comino
  • 1 hoja de laurel
  • pellizco asafétida (hing)
  • 1 cebolla (finamente picada)
  • 1 cucharadita de pasta de ajo y jengibre
  • 1 tomate (finamente picado)
  • ¼ de cucharadita de cúrcuma
  • ½ cucharadita de chile en polvo
  • ½ cucharadita de garam masala
  • ½ cucharadita de sal
  • 1 taza de agua
  • 2 cucharadas de cilantro (finamente picado)

Instrucciones -

  • en primer lugar, en un tazón grande, enjuague y remoje ½ taza de arroz, ½ taza de moong dal durante 10 minutos.
  • en una olla caliente 1 cucharadita de ghee y agregue dal y arroz remojados.
  • saltee durante 2 minutos, o hasta que el dal se vuelva aromático.
  • ahora agregue ¼ de cucharadita de cúrcuma, ½ cucharadita de sal y 3¼ de taza de agua. mezclar bien.
  • tape y cocine a presión durante 5 minutos.
  • en una sartén grande calentar 2 cucharadas de ghee. agregue 1 cucharadita de comino, 1 hoja de laurel y una pizca de asafétida (hing).
  • saltear a fuego lento hasta que las especias se vuelvan aromáticas.
  • ahora agregue 1 cebolla, 1 cucharadita de pasta de ajo y jengibre y saltee bien.
  • Además, agregue 1 tomate y saltee hasta que el tomate se vuelva suave y blando.
  • Manteniendo el fuego bajo, agregue ¼ de cucharadita de cúrcuma, ½ cucharadita de chile en polvo, ½ cucharadita de garam masala y ½ cucharadita de sal.
  • saltee durante 2 minutos o hasta que las especias se vuelvan aromáticas.
  • ahora agregue arroz cocido y dal.
  • también, agregue 1 taza de agua y mezcle bien ajustando la consistencia según sea necesario.
  • tape y cocine a fuego lento durante 5 minutos o hasta que los sabores se absorban bien.
  • finalmente, agregue 2 cucharadas de cilantro y disfrute del dal khichdi con pepinillos y cuajada.

Perhaps one of the health and comfort food recipe made with a combination of rice and moong dal. across India, khichdi recipes are made for different reasons and occasions, but the basic ingredients and combination remains the same. generally, it has all spices and flavours in it and is served as it is without any sides but tastes great when served with a hint of pickle or creamy yoghurt.

Ingredients –
for pressure cooking:
• ½ cup rice
• ½ cup moong dal
• 1 tsp ghee
• ¼ tsp turmeric
• ½ tsp salt
• 3¼ cup water
other ingredients:
• 2 tbsp ghee
• 1 tsp cumin seeds
• 1 bay leaf
• pinch asafoetida (hing)
• 1 onion (finely chopped)
• 1 tsp ginger garlic paste
• 1 tomato (finely chopped)
• ¼ tsp turmeric
• ½ tsp chilli powder
• ½ tsp garam masala
• ½ tsp salt
• 1 cup water
• 2 tbsp coriander (finely chopped)

Instructions -
• firstly, in a large bowl rinse and soak ½ cup rice, ½ cup moong dal for 10 minutes.
• in a cooker heat 1 tsp ghee and add soaked dal and rice.
• saute for 2 minutes, or until the dal turns aromatic.
• now add ¼ tsp turmeric, ½ tsp salt and 3¼ cup water. mix well.
• cover and pressure cook for 5 minutes.
• in a large pan heat 2 tbsp ghee. add 1 tsp cumin, 1 bay leaf and pinch asafoetida (hing).
• saute on low flame until the spices turn aromatic.
• now add 1 onion, 1 tsp ginger garlic paste and saute well.
• further, add 1 tomato and saute until the tomato turns soft and mushy.
• keeping the flame on low add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp garam masala and ½ tsp salt.
• saute for 2 minutes or until the spices turn aromatic.
• now add cooked rice and dal.
• also, add 1 cup water and mix well adjusting consistency as required.
• cover and simmer for 5 minutes or until the flavours are absorbed well.
• finally, add 2 tbsp coriander and enjoy dal khichdi with pickle and curd.
