Ajwain (pronounced uj-wine) is a seed-like fruit often used in Indian cooking as part of a spice blend. Ajwain seeds are pale khaki in color, rough in texture, and oval in shape. Ajwain has been used since ancient times in cooking and for medicinal purposes and is a staple of Indian, Middle Eastern, and African cuisine. It resembles fennel and cumin seeds and is very fragrant, with a thyme-like scent. Its flavor, however, is more similar to oregano and anise due to its bitter notes and strong taste.
