INGREDIENTS -
For Vada:
- 1 cup of urad dal
- ¼ cup moong dal
- 1 chili
- 1 pinch of ginger
- 1 teaspoon of salt
- Oil for frying)
To soak:
- 5 cups of hot water
- ½ teaspoon of salt
- ¼ teaspoon of hing / asafoetida
For the sweetened curd:
- 2 cups of curd (fresh and thick)
- 2 tablespoons of sugar
- ½ teaspoon of salt
To serve:
- Green sauce
- tamarind chutney
- Chili powder
- cumin powder
- Chaat Masala
- boondi
- fresh anardana
- cilantro (finely chopped)
Instructions -
How to make vada for dahi bhalla:
- First, soak 1 cup of urad dal for 5 hours.
- Drain the water and transfer it to the blender or grinder. Also, add 1 chili and 1 inch of ginger.
- Mix until you have a smooth paste, adding water as needed. Try to add a minimal amount of water to prevent the dough from becoming watery.
- transfer the urad dal mixture to a large bowl.
- put ¼ cup of soaked moong dal in the blender.
- Mix until you get a smooth paste and transfer it to the same bowl as the urad dal batter.
- Now add 1 teaspoon of salt and mix well with the whisk.
- Prepare a thick batter. If the batter is runny, add a tablespoon of rice flour.
- Now, using a wet spoon or your hand, drop a spoonful of batter into the hot oil.
- keeping the flame on medium, stir occasionally.
- fry until the vada becomes golden brown and crispy.
- Drain the vada on kitchen paper to remove excess oil.
- Now in a large bowl take 5 cups of hot water.
- Add ½ teaspoon of salt and ¼ teaspoon of hing. Mix well, making sure it is well combined.
- Now drop the hot fried vada into the water and immerse it completely.
- Soak for 30 minutes, or until the vada absorbs the water.
- After 30 minutes, drain the water and transfer it to a plate.
How to prepare sweetened curd for dahi vada recipe:
- First, take 2 cups of curd, 2 tablespoons of sugar and ½ teaspoon of salt.
- beat and mix well making sure everything is well combined.
How to assemble dahi bhalla for serving:
- First, pour the sweetened curd over the vada.
- also pour a generous amount of green chutney and tamarind chutney.
- Sprinkle chili powder, cumin powder, chaat masala.
- Top with boondi, fresh anardana and cilantro.
- Finally, enjoy cold dahi vada or dahi bhalla.
