Dulce Halwa de Zanahoria| Carrot Halwa | Gajar ka Halwa recipe

Ingredientes -

  • 1 kg de zanahoria roja
  • ¼ taza de ghee / mantequilla clarificada
  • 10 anacardos / kaju (picados)
  • 10 almendras / badam (picadas)
  • 3 taza de leche
  • ¾ taza de azúcar
  • ½ taza de khoya / mawa (nada más que leche espesada por calentamiento en una sartén de hierro abierta. Tiene menos humedad que los quesos frescos típicos como la ricotta)
  • ¼ de cucharadita de cardamomo en polvo


INSTRUCCIONES -

  • En primer lugar, pela la piel de la zanahoria y ralla finamente. mantener a un lado
  • En una sartén grande, caliente ¼ de taza de ghee y fría 10 anacardos, 10 almendras.
  • Freír hasta que se dore. mantener a un lado
  • en el mismo ghee añadir la zanahoria rallada y saltear bien.
  • Saltee durante 10-15 minutos o hasta que cambie ligeramente de color.
  • Ahora vierta 3 tazas de leche y revuelva bien.
  • Hervir durante 10 minutos revolviendo ocasionalmente.
  • Continúe hirviendo hasta que las zanahorias estén bien cocidas y la leche se reduzca.
  • una vez que la leche se espese por completo, agregue ¾ de taza de azúcar.
  • mezcle bien y cocine hasta que el azúcar se disuelva y espese.
  • cocine hasta que el halwa se espese y el ghee se libere de los lados.
  • Ahora apague la llama y ½ taza de khoya, ¼ de cucharadita de polvo de cardamomo y nueces fritas.
  • Mezclar bien asegurándose de que todo esté bien combinado.
  • Finalmente, disfrute del gajar ka halwa o del halwa de zanahoria frío o tibio.

  • 1kg red carrot
  • ¼ cup ghee / clarified butter
  • 10 cashew / kaju (chopped)
  • 10 almonds / badam (chopped)
  • 3 cup milk
  • ¾ cup sugar
  • ½ cup khoya / mawa (nothing but milk thickened by heating in an open iron pan. It is lower in moisture than typical fresh cheeses such as ricotta)
  • ¼ tsp cardamom powder


INSTRUCTIONS –

  • Firstly, peel the skin of carrot and grate finely. keep aside.
  • In a large pan heat ¼ cup ghee and fry 10 cashew, 10 almonds.
  • Fry until it turns golden brown. keep aside.
  • in the same ghee add grated carrot and sauté well.
  • Sauté for 10-15 minutes or until it changes colour slightly.
  • Now pour 3 cup milk and give a good stir.
  • Boil for 10 minutes stirring occasionally.
  • Continue to boil until the carrots are cooked well and milk reduces.
  • once the milk thickens completely, add ¾ cup sugar.
  • mix well and cook until the sugar dissolves and thickens.
  • cook until the halwa thickens and ghee releases from sides.
  • Now turn off the flame and ½ cup khoya, ¼ tsp cardamom powder and fried nuts.
  • Mix well making sure everything is well combined.
  • Finally, enjoy gajar ka halwa or carrot halwa chilled or warm.
